Aside from cooking the pasta boiling it for 25 minutes, I began to make the sauce which takes a little while as it is my first time trying it this way:
This served us 4 servings over two days and tasted delicious!
- Olive oil
- Chopped onions (2)
- Tin of chopped Tomatoes
- Tomato paste
- 2 handfuls of Spinach
- 4 chicken fillets, diced as you fry them
- Vegetables such as spring onions, peppers mushroom, cucumbers,
- Flavours for the chicken (I used Cumin and Chicken seasoning)
- Low fat plain Greek yogurt
I put the ingredients in the frying pan in this order waiting for the chicken to cook and started adding in the ingredients together. I did not add the pasta as the amount I made did not appear to fit in the pan I think however I may try this version at a later time. I think if I was to change this recipe I would have added more yogurt (did not believe yogurt could help in taking part of a delicious sauce, and I only used half the tub).
That along with adding the pasta in this recipe along with a few more handfuls of spinach and more garlic paste.
overall, this way I have tried this recipe turned out so tasty. And only at 489 calories per portion!
